Pre-Notes

    If you prefer, you can use milk or dark chocolate candy melts instead of the chocolate and vegetable shortening.

Ingredients

    Version 1:

  1. 3/4 c peanut butter
  2. 1/2 c butter, softened, 1 stick
  3. 1/4 t vanilla extract
  4. 3 c powdered sugar
  5. 2 c semisweet chocolate chips
  6. 1 t vegetable shortening
  7. toothpicks
  8. Version 2:

  9. 1 heaping cup peanut butter, (10 oz or 290 g)
  10. 1/2 c brown sugar, packed (85 g)
  11. 1 c powdered sugar (115 g)
  12. 1/2 stick, butter, melted, 4T (2 oz)
  13. 2 c semisweet chocolate chips
  14. 1 t vegetable shortening
  15. toothpicks

Instructions

    Version 1:

  1. In a large bowl, mix together peanut butter, butter, vanilla, and powdered sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper lined baking sheet.
  2. Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  3. Melt chocolate chips and vegetable shortening in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  4. Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes.
  5. Put back on the baking sheet and refrigerate until serving.
  6. Version 2:

  7. In a large bowl, mix together peanut butter, brown sugar, powdered sugar, and butter. The dough will look dry. Roll into 1 inch balls and place on a waxed paper lined baking sheet.
