Black Bean, Hearts of Palm and Corn Salad

    Salad can be made 1 day ahead, cover and refrigerate until serving.


  1. 1 (16 oz) can black beans, rinsed and drained
  2. 1 (10 oz) pkg frozen corn, thawed and drained
  3. 1 (7.5 oz) can hearts of palm, drained, cut into 1/4 inch thick rounds, or celery diced
  4. 2 large tomatoes, seeded and diced
  5. 1/2 red onion, minced
  6. 1/2 c fresh cilantro, chopped
  7. 1/4 c extra virgin olive oil
  8. 3 T fresh lime juice
  9. 1 t ground coriander


  1. In a medium bowl miix black beans, corn, hearts of palm, celery, tomatoes, red onion, cilantro, olive oil, lime juice, and coriander.
  2. Season to taste with salt and pepper.
