Turkey and Hatch Green Chile Enchiladas

Ingredients

  1. 3 T vegetable oil, divided
  2. 1 onion, halved and sliced thin
  3. 4 garlic cloves, minced
  4. 1 t ground cumin
  5. 1/2 t chili powder, or hatch chile powder if possible
  6. 2 (15 oz) cans Hatch Green Chile Enchilada Sauce, divided
  7. 1 lb cooked turkey breast, shredded in food processor
  8. 1 c canned chopped green chilis, drained or 1 c. roasted Hatch chiles, diced
  9. 8 oz Monterey Jack cheese, shredded, divided (2 c)
  10. 1/2 c frozen corn
  11. 1/2 c fresh cilantro, minced
  12. 12 (6 inch) corn tortillas, may need more
  13. optional garnishes: lime wedges, sour cream, sliced green onions, and hot sauce

Instructions

  1. Adjust oven rack to middle position, and heat oven to 450°F.
  2. Heat 1 T oil in 12 inch skillet over medium heat until shimmering.
  3. Add onion and cook until softened and lightly browned, 5 to 7 minutes.
  4. Stir in garlic, cumin, and chili powder and cook until fragrant, about 30 seconds.
  5. Off heat, stir in 10 ozs of enchilada sauce, shredded turkey, chiles 1/2 c Monterey Jack cheese, corn, and cilantro.
  6. Lightly brush both sides of tortillas with remaining 2 T oil
  7. Stack tortillas, wrap in a damp dish towel, and place on plate; microwave until warm and pliable, about 1 minute.
  8. Place 5 oz of enchilada sauce in the bottom of a greased 9x13 inch baking pan.
  9. Working with 1 warm tortilla at a time, spread 1/3 c filling across center of tortilla, roll tortilla tightly around filling, and place seam side down in baking dish.
  10. Spray tops of enchiladas with vegetable oil spray.
  11. Pour remaining can of enchilada sauce over enchiladas, covering tortillas completely, then sprinkle remaining 1 1/2 c cheese across tops of enchiladas.
  12. Cover dish tightly with greased aluminum foil and bake until enchiladas are hot throughout and bubbling around edges, about 15 minutes.
  13. Remove foil and continue to bake until cheese is completely melted, about 5 minutes.
  14. Serve with lime wedges, sour cream, green onion and hot sauce.
