Pepper Steak (slow cooker)

  1. 3 lb beef sirlion
  2. olive oil
  3. 3 T cornstarch, for dusting meat
  4. 3 garlic cloves, minced
  5. 2 T ginger, grated
  6. 1 large onion, diced
  7. 3 red bell peppers, sliced
  8. 3 yellow bell peppers, sliced
  9. 1 (8 oz) can tomato sauce
  10. 4 T brown sugar
  11. 3/4 c soy sauce, reduced sodium
  12. black pepper to taste
  13. rice for serving, cooked to package directions
  14. optional garnishes: bean sprouts, cilantro, limes


  1. In large skillet, sear the meat in some olive oil until brown on both sides.
  2. Remove steak to a cutting board, and slice into 1 inch thick strips.
  3. Place the sliced steak into the slow cooker, then dust the meat with cornstarch and mix the meat around until there is no more visible cornstarch.
  4. Add the garlic, onion, peppers, tomato sauce, brown sugar, soy sauce and pepper.
  5. Cover and cook on High: 4 hours or Low: 6 hours.
  6. Serve over rice with optional garnishes.
