Pepper Steak Stir Fry

    Stir Fry Sauce

  1. 1 1/4 c water
  2. 1/4 c soy sauce, reduced sodium
  3. 2 T corn starch
  4. 1/2 t black pepper
  5. 2 garlic cloves
  6. 1 t fresh ginger grated
  7. 1/8 t cayenne pepper
  8. Stir Fry

  9. 3 large bell peppers, red, yellow and/or green, diced
  10. 2 large onion, coarsely chopped
  11. 1 T peanut oil or vegetable oil
  12. 1 lb lean boneless beef, cut into thin bite-sized strips
  13. splash of sherry, optional
  14. rice, cooked to package directions for serving


    Stir Fry Sauce

  1. In a small bowl, stir together water, soy sauce, cornstarch, pepper, garlic, and cayenne pepper. Set aside.
  2. Stir Fry

  3. In a wok or large skillet, add oil. Heat over high heat.
  4. Add onions and peppers and stir fry for 3 to 5 minutes until crisp tender. Remove vegetables from wok, cover to keep warm.
  5. To now empty pan, over high heat, add beef. Stir fry for 2 to 3 minutes.
  6. Add a splash of sherry, if desired.
  7. Return vegetables back to wok.
  8. Add stir fry sauce.
  9. Cook and stir till thickened and bubbly.
  10. Serve over rice or noodles.
