Macaroni and Cheese with Stewed Tomatoes

    This recipe can be cut in half and cooked in a 2 qt casserole dish for 30 to 40 minutes.

Ingredients

  1. 4 c macaroni or medium shells, cooked to package directions
  2. 1 c onion, diced
  3. 6 T butter
  4. 2 (15 oz) cans diced stewed tomatoes, undrained
  5. pepper to taste
  6. 2 c sour cream, room temperature
  7. 2 c sharp Cheddar cheese, shredded

Instructions

  1. Preheat oven to 350°F.
  2. Over medium heat in large skillet; saute onions in butter, until tender and starting to brown.
  3. Add tomatoes and pepper. Cook 10 minutes.
  4. Add macaroni, sour cream, and Cheddar cheese, mix well.
  5. Pour into 9x13 inch baking dish.
  6. Bake at 350°F for 45 minutes.
