Stuffed Shells Florentine with Cheese

Ingredients

  1. 1 (12 oz) pkg jumbo stuffing shells, prepared according to package, drained and placed on wax paper
  2. 1 1/2 lbs dry cottage cheese
  3. 1 egg slightly beaten
  4. 1 c mozarella cheese, shredded, (4 oz)
  5. 1/4 c Parmesan cheese, grated
  6. 1 T fresh parsley, chopped
  7. 1 t salt
  8. 1/4 t pepper
  9. 1 (10 oz) pkg frozen chopped spinach, thawed and drained
  10. 3 c prepared pasta sauce
  11. 1/4 c Parmesan cheese, grated

Instructions

  1. Preheat oven to 350°F.
  2. Whip cottage cheese until smooth.
  3. Stir in egg; mozarella cheese, Parmesan cheese, and parsley, salt and pepper.
  4. Fold in spinach.
  5. Spread a thin layer of sauce in a 9x13 inch baking dish.
  6. Fill shells equally with filling.
  7. Place shells in a single layer; top with remaining sauce and sprinkle with cheese.
  8. Cover; bake at 350°F for 25 to 30 minutes or until hot and bubbly.
