Tex-Mex Chicken (slow cooker)

Pre-Notes

    Can substitute sharp Cheddar cheese for the Mexican style cheese.

Ingredients

  1. 1 lb boneless skinless chicken breasts, cut into 1 inch wide pieces
  2. 2 T taco seasoning mix, 18 g
  3. 2 T flour
  4. 1 green pepper, diced coarsley
  5. 1 red pepper, diced coarsley
  6. 1 c frozen corn
  7. 1 (15.5oz) can black beans, rinsed and drained
  8. 1 1/2 c chunky salsa, 360 g
  9. 1 c Mexican style cheese, shredded, 8 oz
  10. rice, cooked to package directions for serving

Instructions

  1. Toss chicken with taco seasoning and flour, place in slow cooker.
  2. Stir in green pepper, red pepper, corn, black beans and salsa; cover with lid.
  3. Cook on Low 6 to 8 hours, or on High 3 to 4 hours.
  4. Stir just before serving; top with shredded cheese.
  5. Serve over prepared rice.
