Shrimp and Vegetable Pasta Toss

    Thomas suggests using a mixture of shrimp and lobster meat as an option!

Ingredients

  1. 3 T olive oil
  2. splash of white wine or sherry
  3. 3 garlic cloves, minced
  4. 1/4 t red pepper flakes
  5. 1 1/2 c chicken broth
  6. 1 lb vegetables (zucchini, carrots, onion, spinach, tomatoes etc.) diced
  7. 1 1/2 lb shrimp, cleaned
  8. salt to taste
  9. pepper to taste
  10. 4 oz cream cheese
  11. 1 lb linguine or spaghetti, cooked to package directions

Instructions

  1. Saute garlic and red pepper flakes in olive oil.
  2. Add vegetables, cook until softened and lightly browned.
  3. Add shrimp, cook until shrimp curl.
  4. Add wine, broth, salt and pepper, cook until hot.
  5. Stir in cream cheese.
  6. Serve shrimp and vegetable mixture over pasta.
  7. Top with Parmesan cheese.
