Meaty Sun Dried Tomato Sauce (slow cooker)

Ingredients

  1. 1 lb bulk Italian sweet sausage
  2. 3/4 lb ground beef
  3. 1 medium red onion, chopped
  4. 2 medium green peppers, chopped
  5. 2 celery ribs, chopped
  6. 3 garlic cloves, minced
  7. 3 (14.5 oz) cans diced tomatoes
  8. 1 (6 oz) can tomato paste
  9. 1 (7.5 oz) jar artichoke hearts (marinated or unmarinated), drained and chopped
  10. 1 c sun-dried tomatoes (not oil packed ), chopped
  11. 3 T fresh parsley, minced
  12. 1 1/2 t fresh thyme minced or 1/2 t dried thyme, crushed
  13. 1 bay leaf
  14. 1 t pepper
  15. 1/2 t salt
  16. 1 to 2 lbs pasta, cooked to package directions
  17. fresh parsley chopped, for garnish
  18. fresh Parmesan cheese, for garnish

Instructions

  1. In a large skillet, cook sausage, beef, onion, green pepper, celery and garlic over medium heat until meat is no longer pink; drain.
  2. Transfer meat mixture to a 4 qt slow cooker.
  3. Stir in tomatoes, tomato paste, artichokes, sun-dried tomatoes, parsley, thyme, bay leaf, salt and pepper.
  4. Cover; cook on Low setting for 8 to 10 hours.
  5. Discard bay leaf.
  6. Serve over pasta.
  7. Garnish with fresh parlsey and cheese if desired.
