Chicken and Sausage (slow cooker)

    Can top with Parmesan or mozzarella cheese.


  1. 1 T olive oil
  2. 4 garlic cloves, crushed
  3. 1/2 c onion, chopped
  4. 1 red bell pepper, chopped
  5. 1 green bell pepper, chopped
  6. 1 small zucchini, chopped
  7. 1 (4oz) can mushrooms, drained
  8. 1 (14.5oz) can stewed tomatoes, Italian seasoned
  9. 1 (6 oz) can tomato paste
  10. 3 hot Italian chicken sausage links
  11. 4 boneless chicken breasts, cut into bite sized pieces
  12. 1 t Italian seasoning
  13. red pepper flakes, to taste, optional
  14. 1 lb pasta, cooked to package directions


  1. Heat oil in skillet. Saute onion and garlic until light brown. Remove from skillet, and set aside.
  2. Add sausage; brown on all sides.
  3. Add chicken and cook just until browned. Drain off excess fat.
  4. Slice sausages into half moons.
  5. In slow cooker combine red pepper, green pepper, zucchini, mushrooms, stewed tomatoes, tomato paste, Italian seasoning and red pepper flakes and garlic/onion mixture.
  6. Add the sausage and then top with the chicken pieces.
  7. Cover and cook on Low setting 4 to 6 hours, until chicken is tender, but not dry.
  8. Serve over pasta.
