Low Country Boil

Ingredients

  1. 1 (12 oz) bottle pale ale beer
  2. 1/4 c to 1/2 c shrimp and crab boil seasonig, such as Old Bay or Zatarain's.
  3. 2 lbs medium red potatoes
  4. 1 large sweet onions, such as Vidalia, peeled and quartered if large
  5. 2 1/2 lbs cured, andouille sausage links, cut into 3 inch pieces
  6. 4 ears of corn, cut in half
  7. 2 lbs medium shrimp, rinsed
  8. Optional condiments: seafood cocktail sauce, hot sauce, lemon wedges and melted butter

Instructions

  1. Fill a 7 gallon stock pot halfway with water.
  2. Add bottle of beer and seasoning and bring to a rolling boil.
  3. Add the whole potatoes to the pot.
  4. Allow the water to return to a boil and cook 5 minutes.
  5. Add the onions and sausage.
  6. Bring the water back to a boil and cook 15 minutes.
  7. Add the corn.
  8. Bring the water back to a boil and cook 10 minutes, or until potatoes are done.
  9. Add the shrimp.
  10. Bring the water back to a boil and cook until the shrimp turn pink, about 3 minutes.
  11. Drain through a colander; discard the liquid.
  12. Serve on a newspaper or platter.
  13. Serve with optional condiments, if desired.
