Shrimp Scampi

  1. 1/4 c extra virgin olive oil
  2. 4 medum garlic cloves, minced
  3. 2 lb large shrimp (21 to 25 count), peeled, deveined and rinsed
  4. 1/4 c fresh parsley minced
  5. 2 T lemon juice
  6. salt to taste
  7. cayenne pepper to taste

  9. 1 t orange zest, finely grated
  10. 1 t red pepper flakes, instead of cayenne pepper
  11. 2 T fresh parsley minced, instead of parsley
  12. white rice, cooked to package directions


  1. Heat oil and garlic in 10 inch skillet over medium heat until garlic begins to sizzle.
  2. Reduce heat to medium-low and cook until fragrant and pale gold, about 2 minutes.
  3. Add shrimp, increase heat to medium and cook, stirring occasionally, until shrimp turn pink, about 7 minutes. Be careful not to overcook or the shrimp will become tough.
  4. Off heat, stir in parsley, lemon juice, salt and cayenne pepper.

  6. Follow recipe for Simple Shrimp Scampi sauteeing orange zest and red pepper flakes with garlic, omitting cayenne pepper, and substituting cilantro for the parsley.
  7. Because this is spicy, it is best served with white rice.
