Fried Shrimp Po' Boys

Ingredients

  1. Cooking oil for frying
  2. 1 c flour
  3. 1/8 t cayenne peper
  4. 1 egg, slightly beaten
  5. 1 lb large shrimp, peeled and deveined, tails removed
  6. 2 small French bread baguettes
  7. 1/4 c mayonnaise
  8. 1/4 c creole mustard
  9. 1 c lettuce, shredded
  10. 6 fresh tomato slices
  11. bottled hot pepper sauce optional

Instructions

  1. In a small bowl, combine mayonnaise and mustard and mix well. Set aside.
  2. Heat 1/4 inch oil in a large skillet.
  3. Combine flour, red pepper, and 1/4 t salt in a shallow dish.
  4. Toss shrimp in beaten egg, then in seasoned flour, coating shrimp completely.
  5. Fry shrimp, half at a time, in hot oil about 1 to 2 minutes or till golden brown.
  6. Remove shrimp and drain on a plate lined with paper towels.
  7. Repeat with remaining shrimp.
  8. Split bread in half, lengthwise. Spread each bread half with some of the mayonnaise/mustard mixture.
  9. Top bottom bread half with fried shrimp, lettuce, tomato, and hot pepper sauce, if desired.
  10. Cut in half and serve as a sandwich, or in 2 inch sections as an appetizer.
