Caribbean Burgers with Mango Salsa

    This is really good served on a toasted whole grain bun with a little bit of Green Onion Ranch Dip spread on the bun!


    Mango Salsa

  1. 1 c mango, diced
  2. 1/3 c tomatoes, diced
  3. 1/2 green jalapeno, seeded and diced
  4. 1 T red onion, finely chopped
  5. 1 T cilantro, finely chopped
  6. 1 T lime juice
  7. salt to taste
  8. pepper to taste
  9. Burgers

  10. 1 1/4 lbs ground chicken or turkey
  11. 2 T ketchup
  12. 2 t jerk seasoning, purchased or homemade
  13. 4 rolls, optional


    Mango Salsa

  1. In small bowl, mix mango, tomatoes, jalapeno, red onion, cilantro and lime juice, salt and pepper, refrigerate until needed.
  2. Grease and preheat grill.
  3. Burgers

  4. In medium bowl, mix chicken, ketchup and jerk seasoning. Shape into 4 patties.
  5. Grill patties for about 10 minutes, flipping halfway through cooking. Burgers are done when a meat thermometer inserted in center reaches 165°F, or juices run clear and burgers bounce back when touched.
  6. Top with salsa, green onion dip and serve on roll if desired.
