Turkey Pepperoni Burgers

  1. 1 1/4 lbs ground turkey
  2. 1/4 lb sliced pepperoni, chopped (about 1 c)
  3. 1 large sprig rosemary or sage, leaves only, chopped
  4. 2 garlic clove, grated, divided
  5. salt to taste
  6. pepper to taste
  7. Sauce

  8. 1/3 c mayonnaise
  9. 1/2 c fresh basil or parsley, chopped
  10. 1/2 t finely grated lemon zest, plus 2 t fresh lemon juice
  11. Burgers

  12. 8 slices provolone cheese
  13. 4 hamburger rolls, split
  14. 4 slices beefsteak tomato
  15. lettuce leaves, for serving



  1. Put the turkey, pepperoni, rosemary or sage, half of the garlic and 1/2 t salt and 1/2 t pepper in a large bowl and mix with your hands until combined.
  2. Form into 4, 1/2 inch thick patties.
  3. Heat a large cast-iron skillet over medium-high heat.
  4. Add the patties and cook, undisturbed, until browned, 5 minutes.
  5. Turn and cook until golden brown on the bottom, 3 more minutes.
  6. Sauce

  7. Meanwhile, whisk mayonnaise, basil or parsley, lemon zest and lemon juice, and the remaining garlic in a small bowl. Season with salt and pepper.
  8. Burger

  9. Top each patty with 2 slices of cheese, cover and cook until the cheese melts, about 1 minute.
  10. Transfer the patties to a plate.
  11. Toast the buns cut side down in the skillet, then remove from the pan and spread with the herb mayonnaise.
  12. Sandwich the lettuce, burger patties, tomatoes and mayonnaise on a bun, and serve.
