Orzo with Chicken, Spinach, Feta and Tomatoes

    Can substitute Parmesan cheese for the Feta cheese.


  1. 4 c chicken broth
  2. 1 T olive oil
  3. 1 onion, diced
  4. splash of sherry or white wine, optional
  5. 1 t dried oregano
  6. juice of 1 lemon
  7. 1 can (14.5oz) diced tomatoes with juice
  8. 1 lb orzo pasta, or other small pasta
  9. 1 lb chicken breasts, cubed into 1 inch pieces
  10. 8 c fresh spinach, roughly chopped
  11. 1/2 c feta cheese, crumbled


  1. Pour the olive oil in to a large skillet or small Dutch oven over medium heat.
  2. Add onion and saute until translucent.
  3. Add a splash of sherry, if desired.
  4. Add the tomatoes, broth, lemon juice and oregano. Bring to a boil.
  5. Add the orzo and reduce heat to simmer. Cover and cook for 6 minutes, stirring occasionally.
  6. Add the chicken and cook on medium heat for an additonal 6 minutes or until the chicken and pasta are cooked.
  7. Add the spinach and stir until just wilted.
  8. Place in bowls and garnish with the feta cheese.
