Chicken Parmesan Burgers

Ingredients

    Buns

  1. 4 (3 oz) square ciabatta rolls
  2. 2 garlic cloves, halved
  3. Chicken Burgers

  4. 1 lb ground chicken
  5. 2/3 c plus 4 T marinara sauce, divided
  6. 1 t dried Italian seasoning
  7. 1 t dried thyme
  8. 1/2 t crushed red pepper
  9. 1/4 t salt
  10. 1/4 t pepper
  11. cooking spray
  12. 1/2 c mozzarella cheese, shredded, divided
  13. 16 basil leaves

Instructions

    Buns

  1. Preheat broiler.
  2. Cut rolls in half. Place bread, cut side up, on a baking sheet.
  3. Broil for 3 minutes or until lightly browned.
  4. Remove bread from pan. Rub each half with cut side of garlic. Set aside.
  5. Chicken Burgers

  6. Preheat oven to 375°F.
  7. Combine chicken, 2/3 c marinara, Italian seasoning, thyme, red pepper, salt and pepper.
  8. Divide into 4 portions, shaping each into a 1/4 inch thick patty.
  9. Heat an ovenproof skillet over medium-high heat.
  10. Coat pan with cooking spray.
  11. Add patties to the pan; cook for 3 minutes.
  12. Turn patties and place pan in oven.
  13. Bake at 375°F for 8 minutes.
  14. Top each patty with 2 T cheese; bake 1 minute.
  15. Layer bottom half of each roll with 2 basil leaves, 1 patty, 1 T marinara, 2 basil leaves; and roll top.
