    This is a delicous meal to have for the Kentucky Derby!

Ingredients

    Mornay Sauce

  1. 1 1/2 T salted butter
  2. 1 1/2 T flour
  3. 1 1/2 c heavy cream, or 1/2 heavy cream, 1/2 half and half
  4. 1/4 c Pecorino Romano cheese, plus extra for garnish
  5. pinch of ground nutmeg
  6. salt to taste
  7. pepper to taste
  8. Hot Brown (2 sandwiches)

  9. 14 oz Roast Turkey Breast, sliced thick
  10. 2 slices of Texas Toast, or Pepperidge Farm white bread
  11. 4 slices of bacon
  12. 2 Roma tomatoes,sliced in half
  13. paprika for garnish
  14. parsley for garnish

Instructions

    Mornay Sauce

  1. In 2 qt saucepan, melt butter and slowly whisk in flour until combined to form a thick paste or roux.
  2. Continue to cook roux for 2 minutes over medium-low heat, stirring frequently.
  3. Whisk heavy cream into the roux and cook over medium heat until the cream begins to simmer, about 2 to 3 minutes.
  4. Remove sauce from heat and slowly whisk in Pecorino-Romano cheese until the Mornay sauce is smooth.
  5. Add nutmeg, salt and pepper to taste.
  6. Hot Brown (2 sandwiches)

  7. For each Hot Brown, place one slice of toast in an oven safe dish and cover with 7 oz turkey.
  8. Take the 2 tomato halves and set them alongside the base of the turkey and slice of toast.
  9. Pour half of the sauce over the dish, completely covering it.
  10. Sprinkle with additional cheese.
  11. Place entire dish under the broiler until cheese begins to brown and bubble.
  12. Remove and cross two pieces of crispy bacon on top.
  13. Sprinkle with paprika and parsley and serve immediately.
