Ham Taleggio Grilled Cheese

    Substitute any cheese you prefer, such as Smoked Applewood Cheddar or Swiss!

Ingredients

  1. 3 T unsalted butter, divided
  2. 1 T olive oil
  3. 2 onions, thinly sliced
  4. 8 thin slices white bread
  5. 10 oz taleggio cheese, rind removed, sliced
  6. 8 oz thinly sliced ham
  7. 1 green apple, thinly sliced

Instructions

  1. Melt 1 T butter with olive oil in a large skillet over medium-low heat.
  2. Add onions and cook, stirring occasionally, until soft and caramelized, about 20 minutes.
  3. Lay out 4 slices of bread. Top with half the cheese, then half the ham. Layer the caramelized onions, apple slices and the remaining ham and cheese on top, finish with the remaining bread slices.
  4. Wipe out the skillet; melt 1 T butter over medium-low heat.
  5. Add 2 sandwiches and cook, pressing gently with a spatula, until the bottom is golden and the cheese begins to melt, about 4 minutes.
  6. Flip and cook until golden, about 4 more minutes.
  7. Repeat with the remaining butter and sandwiches.
