Grilled Pork Chops with Fresh Nectarine Salsa

    Nectarine Salsa

  1. 2 ripe nectarines, pitted and diced
  2. 1 ripe tomato, seeded and diced
  3. 1/4 c diced red onion
  4. 2 T chopped fresh cilantro
  5. 2 T fresh lime juice
  6. 1/4 t crushed red peper flakes
  7. salt to taste
  8. Pork

  9. 1 t ground cumin
  10. 1 t chili powder
  11. salt to taste
  12. pepper to taste
  13. 2 T olive oil
  14. 8 (4 oz) boneless pork loin chops


    Nectarine Salsa

  1. Place nectarines, tomato, onion, cilantro, lime juice, and red pepper flakes in a bowl; toss to blend.
  2. Season to taste with salt.
  3. Cover, and let sit at room temperature 30 minutes to blend flavors.
  4. Pork

  5. Preheat grill to medium-high heat. Lightly oil grate.
  6. Stir the cumin, chili powder, salt and pepper together in a small bowl. Set aside.
  7. Place the olive oil in a small bowl. Brush pork chops with oil, and season both sides evenly with the cumin mixture.
  8. Place pork chops on the preheated grill. Cook until lightly browned and the juices run clear; about 4 minutes on each side.
  9. Place pork chops on serving plates, and top with a generous spoonful of salsa.
