Lime Marinated Pork with Citrus Salsa

Ingredients

    Salsa

  1. 1/2 c chopped orange sections
  2. 1/2 c chopped red, green, yellow or orange pepper
  3. 1/4 c sliced red onion
  4. 1 medium tomato, seeded and finely chopped
  5. 1/2 red jalapeno chili, finely chopped
  6. 1 T chopped fresh mint (optional)
  7. 1 t grated lime peel
  8. Pork

  9. 2 T lime juice
  10. 2 t vegetable oil
  11. 4 garlic cloves, minced
  12. 1/2 t salt
  13. 1/4 t ground black pepper
  14. 2 (3/4 lb) whole pork tenderloins

Instructions

    Salsa

  1. In medium bowl, combine all salsa ingredients; mix well.
  2. Let stand at room temperature for 1 hour to blend flavors.
  3. Pork

  4. Heat grill.
  5. In small bowl, combine lime juice, oil, garlic, salt and pepper; mix well.
  6. Brush oil mixture over pork tenderloins; coating all sides.
  7. When ready to grill, place pork tenderloins on grill over medium heat. Cook 20 to 30 minutes or until pork is no longer pink in center, turning occasionally.
  8. Serve with salsa.
