Chicken Cacciatore

    This is the now almost-famous recipe that was used for the Vincentian Theatre Booster's fundraising dinner.

Ingredients

    Chicken

  1. 4 frozen chicken breasts, thawed and cup into bite sized pieces or 1 pkg of fresh chicken cut up.
  2. 3 T flour
  3. 1 t garlic powder
  4. 1/2 tsalt
  5. 1/2 t pepper
  6. 2 T olive oil
  7. Sauce

  8. 2 T olive oil
  9. 2 green peppers, chopped
  10. 1 red pepper, chopped
  11. 1 red onion, chopped
  12. 3 garlic cloves, minced
  13. 2 (24 oz) jars of Barilla pasta sauce with mushrooms, or your favorite brand
  14. 1 (14 oz) can of tomato sauce
  15. 1 lb pasta, cooked to package directions
  16. Parmesan cheese for serving

Instructions

    Chicken

  1. In a ziplock bag combine flour, garlic powder, salt and pepper.
  2. Add cut up chicken, toss to coat.
  3. Heat oil in a large pot.
  4. Add chicken and cook until browned.
  5. Remove chicken from pot.
  6. Sauce

  7. Add more olive oil, green peppers, red pepper, red onion and garlic cloves, saute until soft.
  8. Add chicken, jars of pasta sauce and can of tomato suace.
  9. Bring to a boil, reduce heat and simmer, covered for 1 hour.
  10. Serve sauce over pasta.
  11. Garnish with Parmesan cheese.
