Mashed Sweet Potatoes

    This recipe is great served with steak!


    Mashed Sweet Potatoes

  1. 4 T unsalted butter, cut into 4 pieces
  2. 2 T heavy cream
  3. 1/2 t salt
  4. 1 t sugar
  5. 2 lbs sweet potatoes, (about 2 large or 3 medium potatoes), peeled, quartered lengthwise, and cut crosswise into 1/4 inch thick slices.
  6. pinch ground black pepper
  7. Sauteed Onion Topping (optional)

  8. 1 large red onion, sliced thin.
  9. 1 T olive oil
  10. 1 T butter
  11. salt to taste
  12. pepper to taste


  1. Combine butter, heavy cream, salt, sugar, and sweet potatoes in 3 to 4 qt saucepan; cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with fork, 35 to 45 minutes.
  2. Off heat, mash sweet potates in saucpan with potato masher.
  3. Stir in pepper; serve immediately.
  4. Serve topped with sauted onions, if desired.
  5. Sauteed Onion Topping (optional)

  6. In large skillet, heat olive oil and butter until melted and hot.
  7. Add onion slices, salt and pepper.
  8. Saute until onion slices are soft and browned.
  9. Serve over mashed sweet potatoes.
