Chicken and Mushrooms

    Any Italian style dressing can be substituted for this recipe.


  1. 4 individual quick frozen chicken breasts
  2. 1/3 c red wine vinegar dressing, 78 g
  3. 1 c onion, chopped
  4. 8 oz baby portabella or cremini mushrooms
  5. 1 T butter
  6. 1 T dried taragon
  7. 1 T dried parsley
  8. 1 t lemon pepper
  9. 2/3 c swiss cheese, shredded


  1. Rinse frozen chicken breasts with cold water to remove ice. Dry with paper towels.
  2. Pour dressing into skillet. Heat over medium heat.
  3. Add chicken breasts, cook about 20 minutes until juices run clear.
  4. Remove chicken breast to a 9x13 inch microwave safe dish.
  5. Add onions, butter, mushrooms, taragon, parsley and lemon pepper to skillet. Cook vegetables until tender, about 3 minutes.
  6. Spoon mixture over chicken breasts. Top with swiss cheese.
  7. Microwave for about 3 minutes until cheese is melted.
