Stewed Okra, Corn and Tomatoes

    I have made this as a side dish, without the ham.


  1. 1 1/2 c frozen sliced okra
  2. 1 c frozen whole-kernel corn
  3. 1/4 c ham, chopped
  4. 1 (14.5 oz) can stewed tomatoes, undrained
  5. 1 t dried basil
  6. 1/4 t salt
  7. 1/4 t pepper
  8. vegetable cooking spray


  1. Spray a large saucepan, with cooking spray.
  2. In saucepan, combine okra, corn, ham, tomatoes, basil, salt and pepper.
  3. Bring to a boil; cover, reduce heat, and simmer for 15 minutes, stirring occasionally.
