    Grilled Vegetable Dressing

  1. 1/4 c balsamic vinegar
  2. 1 T Dijon mustard
  3. 1 garlic clove, minced
  4. 1 T fresh parsley, minced
  5. 1 T fresh rosemary, minced
  6. 1/2 c extra virgin olive oil
  7. Grilled Vegetables

  8. mushrooms
  9. zucchini, sliced in discs
  10. cherry tomatoes
  11. carrots, sliced in half lengthwise if thick
  12. green beans
  13. asparagus spears
  14. olive oil
  15. salt
  16. pepper


    Grilled Vegetable Dressing

  1. Whisk together vinegar and mustard; add garlic, parsley and rosemary.
  2. In a thin stream, whisk in olive oil.
  3. Drizzle over grilled veggies.
  4. Grilled Vegetables

  5. Drizzle olive oil over vegetables, and toss to coat.
  6. Add salt and pepper to taste.
  7. Grill vegetables on a grate or in a grill basket until slightly tender, but not mushy. (Grilling time will vary depending on the vegetable)
  8. Place grilled vegetables on a platter and drizzle with Grilled Vegetable Dressing, just before serving.
  9. Vegetables can be served at room temperature.
