Garlic Roasted Kale (Kale Chips)

  1. 3 1/2 t extra virgin olive oil
  2. 1/4 t kosher salt
  3. 1 garlic clove, thinly sliced
  4. 10 oz kale, stems removed and chopped
  5. 1 t sherry vinegar


  1. Arrange oven racks in center and lower third of oven. Preheat oven to 425°F.
  2. Place a large jelly-roll pan in oven for 5 minutes.
  3. Combine oil, salt, garlic and kale in a large bowl; toss to coat.
  4. Carefully, place kale mixture on hot pan, spreading with a silicone spatula to separate leaves.
  5. Bake at 425°F for 7 minutes. Stir kale.
  6. Bake an additional 5 minutes or until edges of leaves are crisp and kale is tender.
  7. Place kale in a large bowl.
  8. Drizzle with vinegar; toss to combine.
  9. Serve immediately.
