Cherry Vinaigrette

  1. 1/2 c dried cherries (reconstituted in 1/2 c red wine vinegar)
  2. 4 T balsamic vinegar
  3. 2 t sherry vinegar
  4. 1 c extra virgin olive oil
  5. 1/2 t salt
  6. 1/2 t pepper
  7. 3 T sugar (may need more to taste)
  8. 2 medium shallots, roughly chopped
  9. Pistachio Crusted Goat Cheese

  10. goat cheese log
  11. pistachios, finely chopped
  12. olive oil



  1. Combine cherries with vinegar liquid, balsamic vinegar, sherry vinegar, shallots, sugar, salt, and pepper.
  2. Blend with an immersion blender.
  3. Whisk in olive oil, or use immersion blender.
  4. Serve over greens with pistachio crusted goat cheese.
  5. Pistachio Crusted Goat Cheese

  6. Cut goat cheese log into discs.
  7. Coat discs with chopped pistachios, lightly pressing the nuts into the surface.
  8. Heat a small skillet with a very small amount of olive oil, place discs in the skillet and cook to lightly toast nuts and warm cheese, being careful not to overcook and melt cheese.
  9. Serve on top of greens.
