    In the Southern United States, eating black-eyed peas on New Year's Day is thought to bring prosperity in the new year.

Ingredients

  1. 1 (15 oz) cans black eye peas, rinsed and drained
  2. 1 (15 oz) can black beans, rinsed and drained
  3. 1 (10 oz) can Rotel tomatoes with chiles
  4. 1 (11 oz) can shoe peg corn, rinsed and drained
  5. 1 large tomato, chopped
  6. 1 bunch green onions, chopped
  7. 1 red or yellow bell pepper, chopped
  8. 1 t seasoned salt
  9. 1 t chili powder
  10. 8 oz Italain salad dressing
  11. corn chips or tortilla chips for dipping as an appetizer

Instructions

  1. Mix all ingredients together in a large bowl.
  2. Refrigerate until chilled.
  3. Serve with corn chips or tortilla chips, as an appetizer.
  4. Serve in individual dishes as a salad or side dish.
