Holiday Broccoli Salad

Ingredients

  1. 2 large bunches fresh broccoli (2 1/2 to 3 1/2 lbs)
  2. 2 c mayonnaise
  3. 1/2 c sugar
  4. 1/2 c red wine vinegar
  5. 1/2 t salt
  6. 3/4 t ground pepper
  7. 12 oz sweetened dried cranberries (Craisins)
  8. 6 oz dried apricots, diced
  9. 8 oz. sharp Cheddar cheese, shredded
  10. 4.5 oz slivered almonds, toasted
  11. 1/2 small red onion, diced

Instructions

  1. Cut flowerets from broccoli; chop and set aside.
  2. Cut broccoli stalks into 1 inch pieces; pulse stalk in food processor 6 to 8 times or until finely chopped.
  3. In a large bowl, combine flowerets, chopped stalk, cranberries, apricots, and onions.
  4. In a small bowl, whisk together mayonnaise, sugar, vinegar, salt and pepper.
  5. Prior to serving, stir in mayonnaise dressing until thoroughly combined.
  6. Gently stir in Cheddar cheese and almonds.
