Colombian Potato Salad

  1. 1/3 c wine vinegar
  2. 1 T extra virgin olive oil
  3. 1 t seasoned salt
  4. 1 t sugar
  5. 1/4 t ground black pepper
  6. Salad

  7. 1 1/2 to 2 lbs red potatoes, cooked, and cut into 1 inch cubes, cooled, about 6 cups total, or medley of small red, purple and white potatoes
  8. 3 large carrots, peeled, cut into 1/2 inch pieces and steamed until crisp-tender, cooled, or baby carrots
  9. 1/2 c red onion, chopped
  10. 1/4 c cilantro, chopped
  11. 3 large tomatoes, cut into 1 inch chunks



  1. In a small bowl whisk together vinegar, oil, salt, sugar and pepper.
  2. Salad

  3. Combine potato cubes, carrot pieces, onions and cilantro in a large bowl.
  4. Pour salad dressing over potato mixture and gently stir to combine.
  5. Add tomato and gently stir to combine.
  6. Chill to allow the flavors to blend.
