Chili con Carne

    This recipe can be easily doubled or tripled, I use a variety of red, yellow or and green peppers.


  1. 1 lb ground beef
  2. 1 c onion, chopped
  3. 1 c green pepper, chopped
  4. 1 garlic clove, minced
  5. 1 (16 oz) can diced tomatoes, undrained
  6. 1 (16 oz) can dark red kidney beans, rinsed and drained
  7. 1 (8 oz) can tomato sauce
  8. 2 T chili powder
  9. 1/2 t dried basil, crushed
  10. 1 bay leaf
  11. 1/2 t salt
  12. 1/4 t pepper
  13. sharp Cheddar cheese, shredded for garnish
  14. sour cream for garnish


  1. In large pot or Dutch oven, cook meat until it is browned.
  2. Add onion, green pepper, and garlic, cook for 5 minutes.
  3. Stir in tomatoes, kidney beans, tomato sauce, chili powder, basil, bay leaf, salt and pepper.
  4. Bring to a boil; reduce heat.
  5. Cover and simmer about 20 minutes.
  6. Serve with sour cream and cheese as garnish.
