Ingredients

  1. 3 1/4 lb beef tenderloin, cut into bite sized pieces
  2. 1 T vegetable oil
  3. 6 large garlic cloves, minced
  4. 2 large onions, large dice
  5. 1 green pepper, large dice
  6. 1 red pepper, large dice
  7. 1 yellow or orange pepper, large dice
  8. 4 (10 oz) cans Rotel diced tomatoes and green chiles
  9. 2 (14.5 oz) cans tomato sauce
  10. 6 T chili powder
  11. 1 T cumin
  12. 1 T paprika
  13. 1 (12 oz) bottle beer
  14. 2 (16 oz) cans dark red kidney beans, rinsed and drained
  15. sour cream for garnish
  16. sharp Cheddar cheese, shredded, for garnish

Instructions

  1. Heat oil in large stock pot until shimmering.
  2. Add beef and cook until meat is browned.
  3. Add garlic, onions, peppers, Rotel, tomato sauce, chili powder, cumin, paprika, beer and kidney beans.
  4. Bring to a boil, reduce heat and simmer for 1 hour.
  5. Garnish with sour cream and Cheddar cheese.
