Chunky Tomato-Basil Soup

Ingredients

  1. 2 T butter
  2. 1 medium onion, chopped (1/2 c)
  3. 3 small carrots, shredded (1 c)
  4. 2 T flour
  5. 1 c half-and-half
  6. 1 (26 oz) jar chunky tomato pasta sauce
  7. 1 (14.5 oz) can diced tomatoes, undrained
  8. 1/4 c fresh basil leaves, chopped (more for garnish)

Instructions

  1. In 3 qt saucepan, heat butter over medium-high heat.
  2. Add onion and carrots; cook and stir 3 to 4 minutes or until softened.
  3. Add flour; cook and stir until moistened.
  4. Gradually add half-and-half, cooking and stirring about 2 minutes or until smooth.
  5. Stir in pasta sauce, diced tomatoes and basil leaves.
  6. To serve, top with additonal chopped fresh, basil leaves.
