French Onion Soup Gratinee

    This soup can be made ahead, and stored in the refrigerator until ready to serve. If doing so, add the balsamic vinegar after reheating, just prior to serving.

    The cheese can be melted with a kitchen torch instead of placing the bowls under the broiler.


  1. 2 T unsalted butter
  2. 5 medium red onions (about 3 lbs), sliced thin
  3. 1/2 t salt
  4. 1/2 t sugar
  5. 48 oz canned chicken broth, reduced sodium (6 c)
  6. 14 1/2 oz canned beef broth, reduced sodium ( 1 3/4 c)
  7. 1/4 c dry red wine
  8. 2 sprigs fresh parsley
  9. 1 sprig fresh thyme
  10. 1 bay leaf
  11. 1 T balsamic vinegar
  12. ground black pepper
  13. 1 baguette, cut on the bias into 1/2 inch slices (2 slices per serving)
  14. 4 1/2 oz Swiss cheese, sliced 1/16 inch thick


  1. Melt butter in large stock pot or Dutch oven over medium-high heat; add sliced onions, 1/2 t salt, and 1/2 t sugar and stir to coat onions thoroughly with butter.
  2. Cook stirring frequently, until onions are reduced and syrupy and inside of pot is coated with very deep brown crust, 30 to 35 minutes.
  3. Stir in chicken broth, beef broth, red wine, parsley, thyme, and bay leaf, scraping pot bottom with wooden spoon to loosen browned bits, and bring to simmer.
  4. Simmer to blend flavors, about 20 minutes, and discard parsley, thyme and bay leaf.
  5. Stir in balsamic vinegar and adjust seasoning with salt and pepper.
  6. To serve, adjust oven rack to upper middle position; heat broiler.
  7. Set serving bowls on baking sheet and fill each bowl with about 1 1/2 c soup. Top each bowl with 2 baguette slices and divide Swiss cheese slices, laying them in a single layer on bread.
  8. Broil until cheese is well browned and bubbly, about 10 minutes.
