Spicy Jalapeno Chicken Sausage with Mango and Pineapple Salsa

    This sausage is very spicy, but the fruits mellow the taste.


  1. 1 pkg al fresco Spicy Jalapeno Chicken Sausage, sliced lengthwise and cut into half circle discs
  2. 1 T extra virgin olive oil
  3. 2 T dry sherry
  4. 1 c fresh mango, cut into 1 inch chunks
  5. 1 c fresh pineapple, cut into 1 inch chunks
  6. 1 1/2 c salsa or picante sauce
  7. 1/2 c prepared fresh/frozen edamame
  8. 1/2 c canned black beans, rinsed and drained
  9. 3 c cooked jasmine rice
  10. 1 T fresh cilantro, chopped


  1. Saute Jalapeno Sausage in olive oil over high heat.
  2. Add sherry and cook 2 minutes.
  3. Add mango and pineapple and saute for 2 minutes.
  4. Add the fresh salsa, edamame and black beans, and continue to cook 2 to 3 minutes just to heat through.
  5. Mix the chopped cilantro with the rice.
  6. Spoon the sausage and mango and pinapple salsa over the rice.
  7. Serve immediately.
