Split Pea Soup

    If using vegetable broth, this is a great vegetarian option!

Ingredients

  1. (14 oz) pkg green or yellow dried split peas, (2 c)
  2. 1 T olive oil
  3. 2 celery stalks, chopped
  4. 2 carrots, chopped
  5. 2 garlic cloves, minced
  6. 1 onion, chopped
  7. 1/2 t ground pepper
  8. 32 oz water, plus more if needed (4 c)
  9. (16 oz) vegetable broth or chicken broth (2 c)
  10. 1 bay leaf
  11. 1/2 t dried thyme
  12. 1/8 t ground cloves

Instructions

  1. Place the split peas in a strainer and rinse under cold running water. Drain thoroughly.
  2. In a large saucepan over medium heat, heat the oil.
  3. Add the celery, carrots, garlic, onion, and pepper. Saute until the vegetables are wilted, 5 to 7 minutes.
  4. Stir in the split peas, water, broth, bay leaf, thyme, and cloves.
  5. Increase heat to high and bring to a boil.
  6. Reduce heat to low, cover partially, and simmer, stirring occasionaly, until the soup is thick and the peas are mushy, about 1 hour.
  7. If the soup seems to thick, stir in 1/4 c additional water.
  8. Remove and discard the bay leaf.
  9. To serve, laddle into individual bowls.
