Split Pea Soup (slow cooker)

Ingredients

  1. 2 T vegetable oil
  2. 2 medium onions, minced
  3. 2 medium carrots, chopped medium
  4. 2 celery ribs, chopped medium
  5. salt
  6. 4 c water
  7. 4 c chicken broth, low sodium
  8. 1 lb dried green split peas (2 1/2 c), picked over and rinsed
  9. 2 medium smoked ham hocks or 1 (1 lb) chopped ham
  10. 3 bay leaves
  11. 1 T fresh thyme leaves, minces or 1 t dried thyme
  12. 1/4 t red pepper flakes
  13. 1 1/2 T lemon juice
  14. ground black pepper

Instructions

  1. Heat oil in a 12 inch skillet over medium heat until shimmering but not smoking.
  2. Add the onions, carrots, celery and 1/4 t salt and cook until softened and lightly browned, about 10 to 15 minutes.
  3. Transfer the vegetables to the slow cooker insert and stir in the water, broth, split peas, ham or ham hocks, bay leaves, thyme and pepper flakes until evenly combined.
  4. Cover and cook until the soup has thickened and the peas are tender, Low: 10 to 12 hours, or High: 6 to 7 hours.
  5. Remove the bay leaves.
  6. If using, remove the ham hocks, dice and return to soup.
  7. Add lemon juice, season with salt and pepper.
