Yellow Pea Soup with Sausage (slow cooker)

    If you can not find dried yellow split peas, you can substitute dried green split peas.

    Also, you can substitue ham or smoked sausage for the spanish chorizo sausage, if you prefer.


  1. 1 (16 oz) pkg dried yellow split peas, rinsed, sorted
  2. 1 qt water (4 c)
  3. 1 (10 1/2 oz) can condensed chicken broth
  4. 1 c carrot, matchstick
  5. 6 oz smoked Spanish chorizo sausage, casing removed, cut into 1/4 inch slices
  6. 1/4 t salt
  7. 1/2 t pepper
  8. 1/2 c sliced green onions
  9. 1 (11 oz) can Green Giant Mexicorn Whole Kernel Corn


  1. In 4 to 6 qt slow cooker, combine peas, water, broth, carrots, salt and peper; stir gently to mix.
  2. Cover; cook on Low setting for 7 to 9 hours.
  3. About 10 minutes before serving, stir in green onions and corn.
  4. Increase heat to High; cover and cook 5 to 10 minutes or until corn is thoroughly heated.
