Italian Sausage and Spinach Soup with Tortellini

  1. 1 T extra virgin olive oil
  2. 2 garlic cloves, crushed
  3. 1 lb Hot or Mild Italian Bulk Sausage (can use chicken sausage)
  4. 1 c onion, diced
  5. 1 c celery, diced
  6. 1 c carrot, diced
  7. 1 (14.5 oz) can diced tomatoes
  8. 2 c fresh spinach
  9. 2 bay leaves
  10. 2 t dried parsley
  11. 2 t dry Italian seasoning
  12. 64 oz chicken broth, low sodium
  13. 8 oz spinach ricotta tortellini
  14. salt to taste
  15. pepper to taste


  1. Cook tortellini according to package directions and cool under cold running water. Set aside.
  2. Brown sausage in a stock pot or Dutch oven, with garlic. Sausage is done, when no longer pink.
  3. Drain fat from pan.
  4. Add onion, celery and carrot and saute 3 to 5 minutes.
  5. Add Italian seasoning, salt and pepper and saute 10 minutes.
  6. Add diced tomatoes and gently scrape bottom of pan.
  7. Add chicken broth and reduce heat to simmer.
  8. Add bay leaves and simmer for 30 minutes.
  9. Add spinach, parsley, and tortellini, and cook for 5 minutes.
  10. Season to taste and serve.
