Lobster Bisque

    If you do not have an immersion blender, you can carefully puree this in a blender.


  1. 4 1/2 T butter
  2. 3/4 c mushrooms, chopped
  3. 3 T onions, chopped
  4. 3 T celery, chopped
  5. 3 T carrots, chopped
  6. 22 oz canned chicken broth, low sodium
  7. 4 1/2 oz tomato paste
  8. 1/4 t salt
  9. 1/4 t cayenne pepper
  10. 18 oz half-and-half
  11. 3/4 c dry white wine (one small bottle)
  12. 12 oz cooked lump lobster meat


  1. Melt butter in a large saucepan over medium-low heat.
  2. Add the mushrooms, onions, celery and carrot. Cook and stir until tender, about 10 minutes.
  3. Stir in chicken broth and tomato paste, and season with salt and cayenne pepper.
  4. Bring to a boil, and then simmer for 10 minutes.
  5. Add 1/2 c lobster meat and blend with an immersion blender until smooth.
  6. Can be done to this point in advance.
  7. Add half-and-half, white wine and remaining lobster meat.
  8. Cook over low heat, stirring frequently until thickened about 30 minutes.
