Chipotle Pea Spread

  1. 2 c frozen peas
  2. 1/3 c grated Parmesan cheese
  3. 3 cooked bacon strips, chopped finely
  4. 1/4 c sour cream
  5. 2 T extra virgin olive oil
  6. 1 T lime juice
  7. 2 garlic cloves, minced
  8. 1 to 2 t minced chipotle chiles in adobo sauce
  9. 1/4 t pepper
  10. assorted fresh vegetables and or crackers


  1. In a small saucepan, bring 4 cups water to a boil.
  2. Add peas; cover and cook for 1 minute. Drain and immediately place the peas in ice water. Drain and pat dry.
  3. Place peas in a food processor; add the cheese, bacon, sour cream, oil, lime juice, garlic chipotle chiles and pepper. Cover and process until smooth.
  4. Serve with vegetables and/or crackers.
