Marinated Mushrooms

    This recipe can be used as an appetizer for an anti pasto tray, as an accompaniment to cheese, or as a topping for pizza or sandwiches!

Ingredients

  1. 1 lb mushrooms
  2. 1/2 c extra virgin olive oil
  3. 2 T lemon juice
  4. 2 T white wine vingegar
  5. 3 cloves garlic, crushed
  6. 2 T fresh parsley, chopped
  7. 1 t dried oregano
  8. salt
  9. pepper

Instructions

    Marinade

  1. Combine olive oil, lemon juice, vinegar, garlic, parsley and salt and pepper to taste. Pour into a quart sized ziploc bag.
  2. Mushrooms

  3. Trim stems off mushrooms.
  4. Boil water and blanch mushrooms for 2 minutes. Drain very well.
  5. Place mushrooms (while hot) in bag with marinade.
  6. Marinade in the refrigerator for 4 hours, tossing bag occasionally.
