Brussels Sprout Salad with Warm Bacon Vinaigrette

  1. 1/4 c red wine vinegar
  2. 1 T whole-grain mustard
  3. 1 t sugar
  4. salt
  5. pepper
  6. 1 shallot, haved through root end and sliced thin crosswise
  7. 4 slices bacon, cut into 1/2 inch pieces
  8. 1 1/2 lbs Brussels sprouts, trimmed, halved, and sliced
  9. 1 1/2 c finely shredded radicchio, long strands cut into bite-sized lengths
  10. 2 oz Parmesan cheese, grated
  11. 1/4 c almonds, sliced and toasted


  1. Whisk vinegar, mustard, sugar and 1/4 t salt and 1/4 t pepper together in bowl.
  2. Add shallot, cover tightly with plastic wrap, and microwave until steaming, 30 to 60 seconds. Stir briefly to submerge shallot.
  3. Cover and let cool to room temperature, about 15 minutes.
  4. Cook bacon in 12 inch skillet over medium heat, stirring frequently, until crisp and well rendered, 6 to 8 minutes.
  5. Off heat, whisk in shallot mixture.
  6. Combine brussels sprouts, radicchio and almonds, to form salad.
  7. Plate individual portions of salad on plates.
  8. Pour salad dressing onto salads.
  9. Top with Parmesan cheese and serve immediately.
