Spinach Balls

  1. 1 (10 oz) pkg frozen chopped spinach, thawed and drained
  2. 2 c finely crushed herb-seasoned dry bread stuffing mix
  3. 1/2 c Parmesan cheese, grated
  4. 2 t garlic powder
  5. 1/2 t ground black pepper
  6. 1 pinch cayenne pepper
  7. 1 t Italian seasoning
  8. 4 oz unsalted butter,melted (1 stick)
  9. 3 eggs, beaten
  10. 3 crisply cooked bacon slices, crumbled (optional)


  1. Preheat oven to 350°F.
  2. In a large bowl, combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, cayenne pepper, Italian seasoning, (bacon if using), melted butter and eggs.
  3. Shape into walnut-sized balls and place on a baking sheet.
  4. Bake in preheated oven for 20 minutes, or until heated through and browned.

  6. Prepare recipe as directed except for baking. Wrap securely; freeze.
  7. When ready to serve, bake unwrapped at 350°F for 20-25 minutes.
